About Kaito

Chef Kaito Mori trained for eleven years in Osaka before choosing a quieter room in Carbondale.

There are no freezers for fish here, no shortcuts with the rice, and no music at the counter. Kaito seasons the shari by hand each morning, sharpens his yanagiba before every service, and believes a meal should lower your voice, not raise it. Twelve seats. Two seatings. That is enough.

Quiet Praise

★★★★★

“We whispered through the whole omakase without meaning to. The hotate alone was worth the drive from Marion.”

Daniel R. — Marion
★★★★★

“The closest thing to Kyoto I have found in Illinois. You watch his hands and understand why it costs what it costs.”

Keiko L. — Carbondale
★★★★★

“No fuss, no performance. Just perfect rice and fish that tasted like the sea that morning. We rebooked before dessert.”

Sarah M. — Murphysboro
